Lactation Cookie Recipe (adapted from Kathleen Major on drmomma.org)

Ingredients
  • 1 1/2 c. whole wheat flour
  • 1 3/4 c. oats
  • 1 tsp baking soda
  • 1 tsp salt
  • 3/4 c. almond butter or peanut butter
  • 1/2 c. butter, softened
  • 1 c. flaxseed meal
  • 3 T brewer’s yeast
  • 1/3 c. water
  • 1 tsp cinnamon
  • 1/2 c. cane sugar
  • 2 tsp vanilla
  • 2 large eggs
  • 2 c. (12oz) chocolate chips
  • 1 c. chopped nuts of your choice
Directions
  • Preheat oven to 350 degrees Fahrenheit
  • Combine flour, baking soda, cinnamon and salt in a bowl. In a large bowl, beat almond butter, butter, sugar, vanilla, brewer’s yeast, flax meal and water until creamy.
  • Mix in eggs.
  • Gradually beat in flour mixture.
  • Mix in nuts and chocolate chips.
  • Add oats slowly, mixing along the way.
  • Place balls of dough onto greased baking sheets or baking stones and slightly flatten.
  • Bake 12 minutes.

 

Gluten Free Version

Combine and set aside:

  • 1 1/2 cup almond flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp of sea salt

In a separate bowl, beat:

  • 3/4 c of almond butter
  • 1/2 c of Kerrygold butter, softened
  • 1/4 c of turbinado sugar + 1 T xylitol (optional)
  • 1 tsp vanilla
  • 3T brewer’s yeast
  • 1 c flaxseed meal
  • 1/3 c water

Mix in two eggs. Add the dry mixture. Mix in 1 cup of Enjoy Life chocolate chips and 1 cup of chopped nuts of your choice. Fold in 1 3/4 c of gluten free oats. Bake at 350 degrees for 12-14 minutes.
